Slow Cooker Spicy Peach BBQ Chicken

Chicken Dry Rub:
  • 1½ lbs chicken thighs
  • ½ tsp kosher salt
  • 1 tsp garlic powder
  • 1½ tsp chipotle powder
  • 1 tsp smoked or regular paprika
  • ½ tsp brown sugar
  • ½ tsp black pepper
Spicy Peach Sauce:
  • ½ lb peaches (about 2 peaches), halved and pitted
  • 1 tbsp butter
  • ¼ cup sweet onion, diced
  • 1 garlic clove, minced
  • ⅓ cup ketchup
  • 1 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 tbsp Worcestershire sauce
  • ¼ lemon, juiced
  • 1 tbsp chicken dry rub
  • ¼ cup bourbon (optional)
  • 1 tbsp molasses (optional)
  • ½ tsp liquid smoke (optional)
  1. Mix together the dry rub ingredients and evenly coat the chicken in the dry rub.
  2. Let the chicken sit while you make the sauce.
  3. Oil grill grates, then pre-heat the grill to medium-high.
  4. Brush the cut side of the peaches with melted butter.
  5. Grill for 5 minutes or until the peaches get a little charred.
  6. Remove peaches from the grill and peel off skin (it should come off very easily after grilling)
  7. Coarsely chop peaches and place into the slow cooker.
  8. Place a small skillet over medium heat and melt the butter.
  9. Once butter stops foaming, toss in the onions and cook for 5 minutes or until onions have softened.
  10. During the last 30 seconds of cooking time, toss in the garlic.
  11. Dump softened onions and garlic into the slow cooker.
  12. Add in the rest of the sauce ingredients to the slow cooker.
  13. Blend the sauce ingredients together using an immersion blender (or dump all ingredients into a stand blender).
  14. Place the chicken into the slow cooker. Make sure to cover the chicken with the sauce.
  15. Cook on low for 4-6 hours or until chicken is falling apart tender.
  16. Let chicken cool a bit, then shred.
